Recipe for 2 servings
6 cups of sieved plain wheat flour
6 cups of milk or water
4 whisked eggs
4 tablespoons of granulated sugar
½ teaspoon of baking power
½ teaspoon of vanilla essence
1 teaspoon of grated nutmeg
4 pieces of diced of fresh pepper
2 pieces of diced fresh tomatoes
¼ bulb of diced onion
1 cup of drained sweet corn
2 seasoning cubes
A pinch of salt
2 cooking spoons of vegetable oil or melted butter
Mix the sieved flour, baking powder and baking powder in a clean bowl and make a well in the center.
Combine the eggs, milk, sugar, seasonings, salt and vanilla in a bowl and mix properly till the sugar is well dissolved
Add the mixture to the flour; mix it gradually till you have a smooth batter.
Add the diced vegetable, melted butter and mix well.
Fry in a non stick pan, lightly brush the base with vegetable oil and pour a little scoop at a time.
For 2 mins heat on medium until golden brown on both sides.
Dish on a platter and serve with a cup of hot beverage or a glass of fruit juice.
