                                                    ADALU – EPO
         YES I HAVE FULFILLED THE PROMISE I MADE YESTERDAY, HERE IS A VERY SIMPLE WAY TO PREPARE AND RELISH ADALU – EPO….. ENJOY YOUR MEAL!



Recipe for 4 Servings
2 cup of beans{ brown or white}
2 cups of fresh maize
3 fresh red peppers {atarodo} {crushed}
2 cooking spoons palm-oil
3 tablespoons ground crayfish
4 smoked or dried mangala or panla fish {cleaned}
Salt and maggi to taste
1 large onion {sliced}
5 fresh tomatoes [blended}

 METHOD
*  Wash the corn and cook until tender
*  Using a separate pot, wash and cook the beans until tender too.
* Get a bigger pot, set it on fire, pour in the palm – oil, allow to heat for 15 seconds, before pouring in the           onions and tomatoes.
* Pour in  the corn and beans together, stir  until the soft  mixture is well mixed.
* Stir in the pepper and all the other remaining ingredients including the fish.
* Cover the pot and simmer for 10 minutes, until you have the colour of this food below.
*  Remove from heat and serve warm as lunch.
