How to make homemade holiday veggie salad

Christmas is in the air and the holiday period is a time to relax at home and relish the beauty of the holidays. It is a time to eat something simple, healthy, immune-boosting and light.

This simple healthy vegetable salad goes from the point of coleslaw salad to a full-blown vegetable salad.

This delicacy is rich in the right nutrients and can be eaten like this or served alongside Jollof rice, coconut rice, fried rice, peppered spag or macaroni. Do you know you can even choose your own accompaniment?

In making a veggie salad, leafy greens and raw veggies are a great source of fibre and eating enough fibre each day has several health advantages, especially as we push the fight against Coronavirus to help in boosting the immunity of the body.

Eating these veggies would help to increase the fibre in the body and thus help to reduce LDL or “bad” cholesterol and even control blood sugar in the body.

The intake of these veggies will also help to prop the level of weight loss and healthy weight maintenance that the body needs.

VEGGIES NEEDED

Recipe for 3 servings

  • 1 cup diced carrots
  • 1 cup shredded lettuce
  • 1 cup shredded cabbage
  • 1 cup sweet corn
  • 1 cup shredded white onion
  • 1 cup green bell pepper
  • 1 cup orange bell pepper
  • 1 cup diced hard boiled eggs
  • 2 teaspoons mayonnaise

METHOD

  • Mix everything togetther in a sizeable bowl.
  • Stir inthemayonnaise
  • Serve as soon as possible with rice or any pasta
  • Or refrigerate and serve chilled as a vegetable delight
