This delicacy is rich in the right nutrients and can be eaten like this or served alongside Jollof rice, coconut rice, fried rice, peppered spag or macaroni. Do you know you can even choose your own accompaniment?
In making a veggie salad, leafy greens and raw veggies are a great source of fibre and eating enough fibre each day has several health advantages, especially as we push the fight against Coronavirus to help in boosting the immunity of the body.

Recipe for 3 servings
- 1 cup diced carrots
- 1 cup shredded lettuce
- 1 cup shredded cabbage
- 1 cup sweet corn
- 1 cup shredded white onion
- 1 cup green bell pepper
- 1 cup orange bell pepper
- 1 cup diced hard boiled eggs
- 2 teaspoons mayonnaise
- Mix everything togetther in a sizeable bowl.
- Stir inthemayonnaise
- Serve as soon as possible with rice or any pasta
- Or refrigerate and serve chilled as a vegetable delight
