
This yuletide season is a time to relish all kinds of mouth-watering delicacies.
One of such is the fried potato chips garnished with peppered fresh fish. Some tomato ketchup can help to pep up the delicacy.
Recipe for 2 servings
2 cups sliced Irish potatoes
A little salt to taste
8 fresh red peppers
2 fresh green bel peppers [sliced]
8 fresh tomatoes
1 large onion [sliced]
seasoning to taste
1 cooking spoon vegetable oil
1/2 teaspoon crushed garlic
1/2 teaspoon crushed ginger
Method
- Wash the sliced potatoes
- Salt and season the chips slightly
- Vegetable oil for frying the chips
- Fry all sides in deep oil until slightly brown and crispy
- Remove from heat
- Drain and set aside until warm
- Wash and clean the fresh fish head properly
- Sprinkle with lemon or lime juice
- Season well with garlic, ginger and salt as well as seasoning to taste
- Set on fire and stir-fryslightly for four minutes
- Wash the peppers and tomaoes
- Blend them coarsely, adding some sliced onions
- Get a saucepan, heat slightly, add vegetable oil and some onions
- Add the tomatoes and blended peppers
- Add the crushed fresh garlic and ginger
- Stir well and add the fish head
- Cover and simmer until all is well cooked
- Remove from heat and serve alongside the warm chips
- Garinsh with some tomato ketchup and serve with a chilled orange juice
