Zesty plantain cocktail

Recipe for 4 servings:

2 ripe plantains

1 small size ginger root (peeled)

1medium size water melon

1 medium size pineapple

4 strands lemon rind

½ cup lemon juice

1 cup water

1 tablespoon syrup


Wash, peel and cut the plantains into small pieces. Cut the peeled ginger root and add to the plantain pieces. Blend with the cup of water. Pour into a bowl and sieve. Wash, peel and extract the juice from the water melon and pineapple. Add the juice to the sieved plantain mixture. Add the lemon juice. Stir and add the syrup. Stir and serve chilled, garnished with lemon rinds.
